Red rice contains compounds called anthocyanins. We often think of anthocyanins in blueberries and other red-purple fruits and vegetables. The fact that red rice contains anthocyanins is a big positive as you’re getting more nutrients. It is high in carbs and micronutrients. Its unique taste, aroma, and texture make it a good match for different meals.
Recommended use: Rinse the rice several times removing the excess starch. In a medium pot, bring 2 cups water and 1 cup rice to a boil. Cover the pot with a tight fitting lid, then turn the heat down to a simmer and cook for 15 to 20 minutes, until all of the water is absorbed and the rice is tender.
