Quinoa is a gluten-free seed, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It is also much higher in fibre than most grains. Quinoa contains large amounts of flavonoids, including quercetin and kaempferol. These are potent plant antioxidants with numerous health benefits.
Rich in fibre, minerals, antioxidants and complete protein, quinoa is one of the healthiest and most nutritious foods on the planet. It may improve your blood sugar and cholesterol levels and even aid weight loss.
Red quinoa has a richer taste, slightly chewier and heartier texture, and somewhat nuttier flavor compared to white quinoa. It’s often the quinoa of choice for cold salads as it holds its shape better during cooking.
Recommended use: Place 2 cups of water in a wide bottom pan and bring to a boil. Stir in 1 cup quinoa, cover, and return to a boil. Reduce heat and simmer for about 18 to 23 minutes or until all water is absorbed. When quinoa is properly cooked, you can see little curled “tails” emerged from the seeds. Then you can use the quinoa as a base of a salad or a side addition to your meal.
