It is richer in proteins and lower in carbohydrates than modern wheat. Also, it contains more vitamins and minerals than the modern wheat. Einkorn is GMO-free, contains less gluten protein and is easier to digest. These are the main reasons to be preferred to wheat. It has a slightly nutty flavor and easily replaces the common wheat in each recipe.
Recommended use: You can use einkorn for bread and bread products, bakery and sweets. People with Celiac disease or extreme allergies to gluten should still avoid einkorn entirely.
