Buckwheat is a gluten-free grain, a good source of fibre, rich in minerals and various plant compounds, especially rutin. As a result, buckwheat consumption can be linked to several health benefits, including improved blood sugar control and heart health. Buckwheat has a nutty, toasty flavour and soft texture when cooked.
Recommended use: You can pre-soak the buckwheat for 6 hours and rinse it after that. Another option is to rinse it well with fresh water and bring 1 ½ cup water to boil in a small pot. Add 1 cup buckwheat, return to a boil, then reduce heat to a simmer, cover and cook until tender, 10–15 minutes (if the buckwheat is pre-soaked it will take 3-5 minutes to cook). You can use that as a base for breakfast, salad or mix it with some veggies and beans.
