Adzuki beans are rich in protein, fiber, vitamins, minerals and beneficial plant compounds. Soaking, sprouting and fermenting makes it easier to absorb these nutrients. Adzuki beans contain soluble fiber and resistant starch, which can promote digestive health. The carbs in these beans are also less likely to cause flatulence than those of other legumes.
Recommended use: Soak the beans in water for 10 hours, then rinse well. Boil for one hour or until the beans are tender, using a ratio of 1:3 or 1:4 of beans to water.
